Kid Approved Side


I made Parsnip and Apple Puree the other day to go with our steak. It just seemed a tiny bit healthier than regular mashed potatoes.

My kids LOVED it. And it was simple.



Start with:
1 lb. apples, cored/peeled and cut into cubes (Fuji or Honeycrisp)
1 lb. parsnips, peeled and cut into 1in. slices
1 T. butter
salt/pepper



-Throw them in a pot with 1/2 C. water.

-Bring to a boil, cover and let simmer for 30 minutes.

- When soft, dump into a food processor/blender with butter and blend until smooth.
Salt and pepper to taste.



There you have it.

To quote my 3 year old, "Mommy! It's like eating apple juice!"

P.S. This would be a great food for babies.

  1. looks easy and good... i am going to have to try this one.
    got a quest for you... seeing as how you are trying your hand at some ethnic recipes... how about a good sweet rice one? one that isn't dry or sticky but creamy and full of goodness... not finding anything on the internet that looks remotely good.

  2. I have never made sweet rice before in my life. I don't think I have every eaten it. It's not rice pudding right?

  3. no... its a portugeuse dish i think. kinda like rice pudding but i think it may be sweeter... i know i have a recipe someplace but where it is i have no clue... probably in a moving box somewhere... i just figured since you were doing the ethnic thing... maybe patrick's mom may have a good recipe...

  5. Gotcha, you want the dessert. We have Bis Avo in town so I will as her to make it and document it. I think hers is the best. Truthfully I have never made it because it is not one of my favorites.
