Have you ever made something that had Kale in it but didn't use up the entire bunch?
Don't know what to do with the rest?
Make Kale chips!
Serve it next to your sandwich, as a midday snack, whatever.
- Preheat oven to 350. Place rack on top 1/3 of oven.
- Wash and fully dry 3-4 stems of kale.
The drier the better.
- De-stem, and cut into bite-sized pieces.
- Place on a baking sheet.
- Spray with olive oil. Enough to lightly coat.
I have used Pam, but prefer olive oil.
- Sprinkle with salt.
Be careful with the salt, this is very easy to over do.
- Toss well.
- Bake for about 5-10 minutes.
Just check it at 5 minutes, maybe toss is around a bit. Keep cooking it until it crisps up.
I can't give you an exact time because it depends on how wet the kale was, how much olive oil you used, it goes on. But it will get crisp.
Let your one year old chow down. The kid ate half a bowl.
One bunch of kale should make 2-3 batches.
I would not make it all at once since it does not keep. It needs to be eaten the day it is made.
Keep it out on your counter and everyone will snack on it.

i am so tempted by this. what other vegetable do you suggest?
ReplyDeleteGosh, I haven't tried any others. I would think any leafy green that has a lot of strength to it, mustard greens, collard greens...
