Bruschetta



This isn't really in season, but I couldn't help myself. I got a free package of heirloom tomatoes at the store so I had to make it.

I could live off this stuff.




Can you believe the tomatoes that they just GAVE to me?
Ok, I had to buy spinach. But I always buy spinach so it was no big deal.




Chop up your tomatoes.
About 1 lb.




- Chop up 2 cloves of garlic.
Please excuse only one little garlic being in focus.





Chop up about 1/4 C. basil.
Here's how you do it...
Layer a lot of leaves and then roll up.




Then chop.

- Mix the tomato, basil and garlic in a bowl.




Add 3 T. olive oil and 1 T. balsamic vinegar.
Sprinkle in a little salt and pepper.

Mix and refrigerate.




Cuz really? How yummy does this look?
Serve with crackers, on toasted bread (the way it is supposed to be served) or just by the spoonful.
