The first thing Patrick said when he took a bite of this was, "You can do this again."
He loved it. It was totally delich.
- Slice some thick country bread and place on a baking sheet.
- Wilt about 9 oz. of spinach.
- Reserve in a bowl to cool, squeeze out water, and chop.
-Melt 6 T. (yes, 6) in a pot.
- Use some of that butter to brush on the bread.
- Toast the bread at 350 for about 15 minutes.
- Add 1 C. onions, cook until soft.
- Whisk in 3 T. of flour.
- Cook for about 2 minutes.
- Slowly whisk in 2 1/4 C. milk.
- Slowly bring to a boil then lower to a simmer.
- Mix occasionally until it thickens.
- Add reserved spinach.
- Pour spinach mixture over bread.
This is where my camera battery died!
- Add a layer of Black Forest sliced ham (about 1/3 lb.)
- Then thinly sliced tomatoes.
- Top it all of with some gruyere cheese (about 1 C.)
- And broil until the cheese is nice and bubbly.
Man, I really wish I had a picture of the finished meal. It wasn't the cheapest meal to make but it was still only about $15. You can't go out to eat with 4 people for that price. So I say it's worth it.
